Chris LaVeque – Chief Sausage Wrangler
Cooking and creating good food has always been Chris’ passion. His first exposure to a professional kitchen was at Scopazzi’s Restaurant and Lounge located in Boulder Creek where he worked for a number of years verifying his passion for fine food. From there he attended the California Sushi Academy in Hermosa Beach completing the Intensive Sushi Chef course. While there he worked at the Hama Hermosa Sushi Bar. He then attended and graduated from the California Culinary Academy in San Francisco and interned at Manresa Restaurant in Los Gatos. It was there that he learned about high-end Spanish/French cuisine and started to develop an interest in Charcuterie.
Chris later met Justin Severino of Severino’s Community Butcher of Santa Cruz and worked as an apprentice learning the trade of Butchery and Charcuterie. It was then that Chris developed a passion for educating and providing the local community with the best locally and humanely raised meat products available.
Later, Chris took a job at Gabriella Café and worked his way up to sous chef. While there, he continued to make Charcuterie and hone his skills. Next came employment at the Cellar Door Café in the Bonny Doon Winery tasting room as sous chef. It was then that Chris was invited to join the Santa Cruz Community Farmers’ Market as a vendor providing the local community with the finest fresh innovative and traditional sausages available.
The Farmers’ Market provided the opportunity to test the waters. His fresh sausages and meats became a hit but he wanted to expand his offerings to include smoked and cured product too. The only way to do this was to open a full service Butcher Shop. After an extensive search he found his present location at the Swift Street Courtyard on the Westside of Santa Cruz.
After eight months of hard work renovating the new space, he opened his doors to the public. You can find Chris most days at the Shop or at the Downtown Santa Cruz Farmers’ Market on Wednesday.
