el Salchichero is more than a traditional butcher shop. We make all of our handcrafted charcuterie and cured meats in-house and offer only the most exquisite cuts of meat from family farms and ranches. We are always cookin’ up something new and seasonal.

Whether you’re full Carnivore or just eating meat occasionally, it is crucial to know and honor where it comes from. We believe that true health starts with respect for the land and the animal that we are nourishing ourselves with. All of our meats are from small farms and local ranches, so there is a connection to its journey. Read more about why our owner, Chris, is so passionate about good meat below.

Our Offerings

  • We make all of our sausages in-house with our own home recipes. We have standby favorties available year-round as well as seasonal specialties.

  • All of our charcuterie is made-in house with home recipes in our curing room.

  • All of our artisanal jerky is made in our shop smokehouse using both whole muscle and cut and form techniques.

  • We only source the best cuts of meat from family farms and ranches as locally as possible. We only sell:

    • Grass-fed, grass-finished beef

    • Grass-fed, grain-finished beef

    • Pasture-raised pork

    • Pasture-raised and free-range poultry

  • We believe in a no-waste policy, so we use our extra tallow to create the finest skincare with locally sourced ingredients.

  • We create our own in-house spices using locally-sourced ingredients that pair perfectly with our fine cuts of meat.

  • We make the coolest merch there ever was. You’re gonna want it all.

We only sell meat that we’d eat ourselves. We go through a strict vetting process with all of the family farms and ranches we source from to ensure you’re getting the best of the best.
